I LOVE LOVE LOVE blueberry jam. When I was a young’un, my grandma used to make several different varieties of jam for each of her kids and their families. Each year at Christmas, we all went home with a box of jam from her very own kitchen. And the blueberry was my absolute favorite.
But! All that sugar!!! Starting Trim Healthy Mama, this was one of the things that became a goal for me – I needed to find a recipe to make blueberry jam! And I found it thanks to the Sugar Free Londoner!
Check out her recipe below! Personally, I will be adding a bit of stevia to bring up the sweetness and tone down the tartness (not that tartness is a bad thing!). I just have a HUGE sweet tooth!

So, if you are anything like me at all, you have chocolate cravings from time to time! Or sometimes, it’s just a craving for something sweet but knowing I shouldn’t eat anything sweet in that moment, a small nibble would suffice! Well! I’ve got a remedy for you! Trim Healthy Mama came out with what they call Skinny Chocolate! It’s basically coconut oil and cocoa and a natural no-calorie sweetener mixed together! Coconut oil is used because it helps the chocolate firm up once cooled (chilled) and also because coconut oil is a way to rev up that metabolism engine! If you google or Pinterest skinny chocolate, you will find all sorts of ideas and variations that people have come up with for this amazing treat! And like the rest of the blogosphere, I’m no different!
So, I present to you today, my version of Skinny Chocolate! I will say, I think this recipe will always be a work in progress for me but I’m pretty satisfied with it at the moment. It’s basically tastes like dark chocolate and I’m good with that. However, I’d like to come up with a way for a more milk chocolate tasting one sometime in the future!

CHRISTINE’S SKINNY CHOCOLATE
1/4 cup Coconut Oil, melted
2 tbsp Good Quality Cocoa (I like Hershey’s special dark)
1 tbsp Heavy Cream
1/2 tbsp Cream Cheese
1 tbsp Truvia, (powdered in a coffee grinder or high powered blender cup)
1 pinch Mineral Salt
Blend all ingredients together well (I actually just use a milk frother). Pour into candy molds or the bottom of a pan to break apart later. Place in the freezer to harden.
This candy needs to be kept chilled. I find that the refrigerator sometimes isn’t even quite cold enough and it will melt somewhat in your hands. But the freezer is a bit too hard. So find what works for you! But even frozen, it’s still awesome. Totally works for those unexpected cravings!
